The fan softens the grill’s aggressiveness and prevents the surface from burning while the inside still needs time.
Another common combination is hot air, sometimes identified by a fan surrounded by a circular line. Here the point is not to heat only from above or below, but to move hot air steadily. It is a very useful function for delicate baking, cookies, puff pastry, roasted vegetables, or two trays at once. If a recipe calls for uniformity and speed, this mode usually performs better than static cooking.
There is also bottom heat with fan, a less talked-about but very useful mix. In ovens that include it, the fan helps the base receive heat more consistently. It is an interesting option for doughs that need to be dry and firm, such as some pizzas, quiches, or savory tarts. The symbol can vary quite a bit between brands, so here observation is what matters: if the drawing combines a bottom line with fan blades, the goal is usually to reinforce the base and distribute temperature better.
On some panels there is a rapid preheating function, usually represented by several heat marks or by a specific symbol depending on the manufacturer. It does not cook by itself, but speeds up reaching the desired temperature. It is especially useful in ovens that take a little longer to stabilize. Defrosting, light, and other signs that often go unnoticed
Defrosting usually appears with a snowflake, a drop of water, or a fan without heat. In that mode the oven moves air at low intensity to speed up defrosting without starting to cook the surface. It does not replace defrosting in the refrigerator, which remains the safest option for many foods, but it is useful when you are short on time and want to avoid the sudden change caused by hot water or the microwave.
